This salsa is more of a chunky salsa or a pico de gallo. Call it which ever you wish, either way it’s delicious!
One of the first paleo snacks I tried was a plantain chip. I had been constantly reading and seeing pictures of them all throughout the paleo community. Honestly I was a little skeptical, but I still wanted to try it, and I did! Guess what? I instantly fell in love with them! They are so good by themselves! and with salsa! and pulled pork! Hey, how about some paleo nachos?!? 🙂
I gave my brother one to try, who isn’t very “open minded” with trying new things, and he loved it too! Would he rather have a bag of Dorito’s? Probably, but still I was so happy he liked it!
Plus this salsa is a perfect snack with this year’s football season just starting and it’s not full of chemicals and added sugars!
As for football I’m not really a football person, so I’ll be watching TV drama, and my dad and brothers will be the ones watching their favorite team, the Pittsburgh Steelers! What team are you rooting for? If you’re like me and not into football, what’s your favorite show?

Time: 10 minutes
– 1 large tomato, diced
– 1/8 of an onion, diced
– 1 small chili pepper, finely diced
– 1/2 of a green bell pepper, diced
– 1/2 a lime, juiced
– 1/2 clove of garlic, minced
– 1/4 tsp. salt
On a cutting board, dice the tomato, onion, bell pepper, chili pepper. Mince garlic.
Place all the cut veggies into a bowl. Squeeze half of a lime into the bowl. Add salt.
Gently stir everything together, until everything is evenly distributed.
Serve with plantain chips, on taco salads, or with some eggs! Enjoy!
