Who else grew up helping their mom (or grandma!) make cookies in the kitchen? And perhaps helping “clean up” too (AKA lick the bowl or spatula)? I know I did…both! One of my favorite cookies to help make (other than the infamous chocolate chip cookies!) was my mom’s jam thumbprint cookies. This was probably because it was pretty much like playing with play dough as I rolled the dough balls and used my thumb to imprint each cookie. Except it was WAY better than play dough because unlike play dough, the cookie dough was actually edible. Well minus the fact that it contained raw eggs! 😉
So as I was reminiscing of making these fun nostalgic cookies, I thought it would be fun to create a paleo and allergy friendly version using SunButter! This stuff is seriously my latest favorite thing! I remember trying a sunflower seed butter a while back, and I honestly wasn’t so much a fan. BUT a few months ago I wanted to give it another shot and try the brand SunButter, and oh my gosh you guys I liked it ALOT!
I think it had/has a large part to do with SunButter’s amazing quality, creamy texture, and delicious flavor! It’s seriously so good! I love it by the spoon, on GF toast, a paleo waffle, or in these fun no-bake cookies!
Not only are these cookies easy peasy to make! but they are also perfect to make during the summer heat, because you don’t have to worry about turning your oven on and heating up the entire house! Plus you don’t have to worry about those raw eggs! 😉 or wait for the what seems like forever baking and cooling time, that traditional cookies require, which is pretty much every impatient kids dream!… not that I know anything about being impatient or anything 😉

- Place all the ingredients (minus the jam) into a food processor. Process until a ball of dough starts to form. Take a tablespoon size amount of mixture and roll into a ball. Using your thumb, make an indent in the center of the ball and then slightly flatten the ball with the palms of your hands. Repeat with remaining mixture of dough. Fill each cookie with a teaspoon of chia jam. Place in the fridge for 30 minutes. Enjoy!
