A creamy, dreamy, tropical twist on chia pudding. Quick and easy recipe great for healthy breakfasts, snacks, or desserts.
Aloha lovely folks, something about summer time just puts me in such a tropical mood. Sandy beaches, waves hugging the shore, warm sunshine shining down, and abundance of fresh summer produce at markets. Oh how I love thee summer. and oh how I am so sad you are coming to an end. Literally at the end of this week I move back to campus at my school. It’s bittersweet because I do really love my college, my major, and living on campus but I also really love everything about being home and being close to family.
Speaking of family, my family and I just recently went on our family vacation to Hawaii, which was a first time for us minus my dad whose had work trips there previously. We went to Honolulu/Wakiki on Oahu for a few days and then took a plane to the Kona side of “the big island” of Hawaii. All in all it was an amazing trip and I am excited to share this tropical inspired recipe with all ya!
I actually created this recipe prior to leaving to Hawaii, and lets just say the fruits on this chia pudding do not do the AMAZING tropical fruits in Hawaii justice. For real can we talk about all the amazing fresh produce they have locally, so jealous! Honestly, I think that was one of my favorite things about Hawaii – the most local and fresh tasting produce. I even got to try some fruits that I had never tried before, including passion fruit, dragon fruit, and papaya! and some fruit I don’t normally love- I tried there and LOVED it. For instance, I am normally not much of a cantaloupe gal but oh my the kind I tried in Hawaii was out of this world good! The mango in Hawaii was also incredible -YUM. Oooooh and I also got to drink coconut water straight out of a coconut, freshly hacked off a tree by a local on the side of a scenic road….bucket list check!

- 1 cup coconut milk
- ¼ cup chia seeds
- 3 tbsp. lemon juice
- zest of 1 lemon
- 3 -4 tbsp. maple syrup
- 1 tsp. vanilla
- pinch of salt
- Banana, sliced
- Kiwi, sliced
- Orange, sliced
- Mango, sliced
- Strawberries, sliced
- Place all the ingredients in a large bowl and whisk well. Place into a large mason jar and give it a shake. Place in fridge overnight. Scoop a serving into a bowl and top with freshly cut tropical fruits. Enjoy!
